Easy Roasted Sweet Potato

2-3 sweet potatoes

1 T extra virgin olive oil

salt to taste

garlic powder to taste

Preheat oven to 425 degrees. Scrub sweet potatoes under running water. Pat dry and slice into about 1/2 inch rounds. Be sure to use a sharp chef’s knife to make this task relatively easy. Then slice into quarters. Place sweet potato pieces on a jelly roll pan, drizzle with oil and sprinkle with salt and garlic powder. Toss well and arrange in a single layer on the pan. Roast for about 15 minutes, remove pan and stir the potatoes, roast for another 15 minutes. Enjoy!
