Grandma's Cranberry Salad Remade
This recipe is from my grandmother and is a family holiday favorite! I made some changes, including reducing the sugar by half and not peeling the apples. This makes this recipe much lower in sugar, although still sweet, and gives it additional fiber and nutrients.
4 cups raw cranberries
3/4 cup sugar
4 cups chopped apples (about 2 large apples)
6 oz cherry jello
(optional) 1 cup chopped nuts
(optional) 1 cup chopped celery)
Cranberries typically come in 12 oz packages. You will need 1.5 packages for this. You can either double the recipe to use all of the cranberries or freeze the left overs. Wash the cranberries, place in a food processor and grind them up. Add sugar and stir. Add chopped apples, nuts (if desired), celery (if desired), and jello. Stir, chill, and enjoy!
