Easy Pesto Shrimp on a Tortilla

3/4 pound shrimp

1/4-1/2 pound green beans or other vegetable such as broccoli

1/2 cup prepared Spinach Basil Pesto

4 whole wheat soft tortillas

Feta cheese, just enough to sprinkle on 4 tortillas

Remove any shells or tails from shrimp and chop beans into bite-size pieces. Heat 1 T of olive oil in a frying pan. Add shrimp and saute for 2-3 minutes, then add green beans. Cook until shrimp is pink and cooked through. On a cookie sheet sprayed with non-stick spray, place four whole wheat tortillas and top with a layer of spinach basil pesto. Next, add shrimp and bean mixture. Sprinkle each tortilla with feta cheese. Broil in the oven for 2-3 minutes. Enjoy!

*Note, if you haven’t made the Spinach Basil Pesto, you should! Make a large batch, place into ice cube trays or baby food trays and freeze. Once it is frozen, put it into a labeled freezer bag. This pesto will help you to create many easy and delicious meals!
