Spinach and Strawberry Salad with Pomegranate Dressing
Spring is coming, even though it doesn’t really feel like it today! I love a good salad with fresh strawberries on it this time of year. I’ll be honest, I had some left over pomegranate juice in my refrigerator from another recipe, so that is what prompted me to make a dressing with pomegranate juice. It turned out pretty tasty!
5 cups fresh spinach
1 cup sliced fresh strawberries
1/4 cup thin sliced red onion
1/4 cup chopped walnuts
1/4 cup pomegranate juice
2 T olive oil
1/4 tsp pomegranate molasses
1 T balsamic vinegar
Spray a small frying pan with non-stick cooking spray and add the walnuts. Cook, stirring frequently, with medium heat. When nuts appear lightly toasted, remove from heat and allow to cool. Nuts are easy to burn so keep a close eye on them. Toss spinach with strawberries, onion, and walnut.
In a separate bowl or measuring cup, whisk together pomegranate juice and next three ingredients to make the dressing.
Place desired amount of salad on individual plates and top with desired amount of dressing.
