Kale Apple Cherry Salad
Many of us are trying to consolidate our grocery shopping with Covid-19 hanging around. It can be tough to strike that balance of getting enough produce to last you a week or two and keeping it from going bad. Frozen vegetables are certainly a great and nutritious option.
If you are like me and LOVE fresh vegetables, consider throwing kale into your shopping cart or your online order. Kale will certainly go bad in time, but it holds up much longer than most green leafy vegetables likes spinach and. I have left kale in my refrigerator for almost two weeks before using it and it was still great!
2 T apple cider vinegar
1/4 C apple juice
1/2 T Dijon mustard
1 T honey
1/4 tsp salt
1/4 tsp ground pepper
2 T olive oil
1 bunch of kale, washed and well chopped
1 apple, cored and chopped (my family likes honeycrisp)
1/2 cup chopped walnuts
1/3 cup crumbled feta cheese
1/3 cup dried cherries, chopped
Be sure that kale is chopped in small pieces. Whisk together apple cider vinegar, apple juice, Dijon mustard, honey, salt pepper, and olive oil. Pour about 1/4 cup of dressing on the kale and massage into the leaves. Toss the apple, walnuts, feta cheese, and dried cherries into the salad. Refrigerate for 2-3 hours before serving and serve with remaining dressing to be drizzled as desired.
