Cherry Oat Granola Bars

Inspired by Good Housekeeping Kids Cook!

2 cups old-fashioned oats

1/2 cup honey

1/2 cup canola oil

2 egg whites

2 T brown sugar

1 tsp ground cinnamon

1/2 tsp salt

3/4 cup ground flaxseed

3/4 cup chopped pecans

3/4 cup chopped dried tart cherries

Preheat oven to 325 degrees F. Spray a 13 X 9in baking dish with cooking spray.

In a medium frying pan, spray with cooking spray and then add the oats. Cook over medium heat while stirring for about 5 minutes or until lightly toasted and fragrant. Set aside to cool.

In a medium-sized bowl, whisk together honey, canola oil, egg whites, sugar, cinnamon, and salt. Gently fold in flax seed, pecans and cherries. Last, add the oats and fold those in as well until well mixed.

Spoon the mixture into the prepared baking dish and flatten/smooth with a spoon. Bake for 28 minutes. Allow to cool and then cut into 16 bars.

Store in an airtight container for up to 4 days or freeze!
