Pumpkin Bread

1 15 oz can pumpkin puree

4 eggs

1 cup canola oil

2/3 cup water

1 1/2 cup brown sugar

3 1/2 cup whole wheat flour

2 tsp baking soda

1 1/2 tsp salt

1 tsp ground cinnamon

1 tsp ground nutmeg

1/2 tsp ground cloves

1/4 tsp ground ginger

Preheat oven to 350 degrees. Spray either 3 loaf pans or 2 muffin tins with non-stick spray.

In a large bowl, whisk together pumpkin, eggs, oil, water, and brown sugar. In another bowl, stir flour, baking soda, salt, and remaining spices. After dry ingredients are well mixed, stir into wet ingredients and mix well. Pour batter into loaf pans or muffin tins. Bake loaves for 50 minutes or muffins for 25 minutes. Cool and enjoy!
