Pesto Quinoa Chicken
1 cup uncooked quinoa
2 cups low sodium chicken broth
1 pound chicken cut into bite-sized pieces
1 pound fresh green beans cut into 1 inch pieces
1/2 cup cherry tomatoes cut in half
1/2 cup prepared pesto*
Bring chicken broth to a boil in a medium saucepan over high heat. Add quinoa, stir, and decrease heat to low. Cover the quinoa for 15 minutes.
Meanwhile, spray a large frying pan with non-stick cooking spray and saute chicken for about 7-8 minutes. Add green beans and continue to cook until chicken is cooked through and green beans have turned bright green. Stir chicken, beans, tomatoes, and pesto into the quinoa and serve.
*Pesto is really pretty easy to make and far better homemade than store bought! Use this recipe to make yours at home. Make a large batch and freeze in ice cube trays or something similar. When it is frozen, pop the cute cubes out and store in a labeled freezer bag or container. Taking time to do this occasionally will bring you many delicious and easy entrees!
