Cherry Chocolate Energy Bites
These delicious little energy bites pack a powerful nutrition punch. There is/are protein, fiber, antioxidants, carbs, and yummy in every bite. Try them in your kids’ lunches, for times when you need a boost of energy, or a portable snack.
3/4 cup creamy almond butter
1/4 cup honey
1/2 cup dried tart cherries, chopped
1/4 cup small or mini dark chocolate chips
3/4 cup rolled oats
1/2 cup unsweetened coconut flakes
1/4 cup ground flax seed
In a small bowl, stir together honey and almond butter. In a medium bowl, mix cherries, chocolate, oats, coconut, and flax seed. Add the almond butter mixture to the dry ingredients and stir until ingredients are well mixed. Scoop a rounded tablespoon of the mixture and roll in the palm of your hands to make a ball. Place on a cookie sheet and put in the freezer for about 10 minutes to set. Either transfer to an air tight container in the refrigerator, or continue to freeze before storing in a container in the freezer.
