Balsamic Glazed Brussels Sprouts

Olive oil

1 pound brussels sprouts

2 T honey

1/2 cup balsamic vinegar

Preheat oven to 425 degrees.  Cut brussels sprouts in half, or quarters if they are large, and toss in generous amount of olive oil.  Transfer to a jelly roll pan, sprayed with cooking spray, in a single layer and bake for 25-30 minutes.  Mix balsamic vinegar and honey in a small sauce pan.  Bring to a boil and then reduce to simmer for 20-30 minutes or until reduced to half and thickened.  When brussels sprouts are ready, transfer to a serving bowl and toss with the balsamic glaze. Enjoy!
